Another fantastic recipe honouring the Portobello Root Vegetable Festival, in celebration of the wonderful abundance of root vegetables at this time of year. Roots are perfect for creating economical, tasty treats that are simple and completely satisfying… making them great for the whole family!

Carrot and Swede Crush

400g swede, peeled and diced into 1 inch cubes
400g carrots, peeled and diced into 2 inch thick slices
Maldon sea salt (to taste)
Black pepper (to taste)
50g butter

Using a bamboo steamer or just a colander over a pan of boiling water (double boiler), place the vegetables on a sheet of tin foil and cover with a lid. Steam the vegetables for about 25 minutes (or until they are cooked through) and remove from steamer and place in a heat proof bowl. Add the butter and season well with salt and pepper and using a fork, gently crush the vegetables until you have a chunky texture that isn’t too fine. Taste it to make sure that the seasoning is to your taste and serve.
